Sunday in Quarantine

All of these days in quarantine seem to mesh together, and the weekend is no different. It is hard to believe that I have been away from Penn State for almost a month now. Of course, Friday was a gorgeous day here in New Jersey, not a cloud in the sky, perfect temperature and the same is forecasted for tomorrow (Monday), but, of course the weekend was cold, rainy, and quite frankly-- miserable.


We are all starting to go a little stir crazy, last night we dug out the Wii and played hours of games. This morning we paced around the house figuring out what else we can do to entertain ourselves. With plenty of cucumbers and luckily all the ingredients we decided to make pickles!





We found a recipe online and gave it a try! The recipe calls for:


-3 pickling cucumbers, (we just used mini normal ole cucumbers!)

-¼ ounce of fresh dill, a few sprigs per jar (we have access to an AeroGarden, so we used the fresh dill that it grew! It is so fun to use recipes that call for the herbs that are home grown, tonight we are trying a fresh pesto recipe with our Basil!)

-½ cup of white vinegar

-½ cup of water

-2 cloves of garlic (we did not have any fresh garlic on hand so we used minced garlic.)

-1 ½ tsp of kosher salt (we substituted with coarse sea salt.)

-¼ tsp of sugar

-½ tsp of whole mustard seeds

-¼ tsp of whole black peppercorns





We went through a pickling phase last summer too with the same recipe and they turned out delicious! I can’t wait until they are ready for us to eat. It is always fun to spend a rainy day in the kitchen!
